It just makes it more sanitary when the sausage stays inside the press when you crank down on it, keeping the sausage from oozing out the side of the plate. Just fill the stuffer as usual, lay the gasket on top of the sausage and crank down, the gasket acts like a spatula wiping the sides and keeping most of the the sausage from leaking out around the plate.
